Vine ripened tomatoes, sweet onions and fresh green beans always seem to work well together. Combine these ingredients with a Dijon Vinaigrette and you have summer magic. The perfect side dish for most any type of potluck, barbecue or get together and glamorous enough for any type of sit down dinner.
The preparation is very easy for this recipe, I found that when you boil the green beans stir about 2 minutes so they all cook evenly and for better flavor let the ingredients marinade together for at least an hour before serving.
Here's the recipe and ingredient list:
1 pound green bean
1/2 sliced Walla Walla sweet onion (sliced thin)
1/4 cup feta cheese (optional)
1 large tomato or small container of cherry tomatoes
For fresh herb garnish you can use basil, thyme or chives (really anything you want)
Boil in a large pot of salted water approx 6 to 7 minutes, be sure to stir so they cook evenly. Cook until they are tender-crisp. Drain and plunge in ice bath. Add onion and tomato.
To make marinade:
2 Tablespoons fresh lemon juice
2 Tablespoons White Wine vinegar
1/4 cup canola oil
1 Tablespoon fresh chopped basil or whatever herb you are using
1 clove garlic
2 teaspoons Dijon mustard
1 teaspoon sugar
1/2 teaspoon of salt
Whisk together, add to green bean mixture, toss well, refrigerate. To serve: add feta cheese and fresh basil. Enjoy!

Cheri Savory Spoon
Mysavoryspoon was first started in 2010 as a way to journal recipes that I had collected from cookbooks, magazines, family and friends. Most everything was savory, using legumes and whole grains. Along the way I discovered a love for baking. Now a couple times a month you might see some type of sweet pie or treat.
