Carob Confection


These little gems are nutritious and quick to prepare. They are rich in vitamins, minerals, low in sodium and high in potassium. Natural peanut butter and coconut merge with the flavor of carob to form an irresistible treat for both adults and children. This recipe is adapted from the cookbook, "Confessions of A Sneaky Organic Cook" by Jane Kinderlehrer.

Ingredients:

1/2 cup carob powder
1/2 cup honey
1/2 cup creamy peanut butter (natural not hydrogenated)
1/2 cup sunflower seeds
1/2 cup sesame seeds
1/4 cup wheat germ
1/4 cup soy flour
Medium sized coconut flakes to roll carob confection in

To prepare:

Mix all ingredients together except coconut.


Form into balls. Roll in coconut flakes (unsweetened). Store in an airtight container in the refrigerator.


The yield really depends on the size that you make them. I used a teaspoon to measure mine out. Makes about 25 total. Enjoy!

Mysavoryspoon was first started in 2010 as a way to journal recipes that I had collected from cookbooks, magazines, family and friends. Most everything was savory, using legumes and whole grains. Along the way I discovered a love for baking. Now a couple times a month you might see some type of sweet pie or treat.
