Warm Arugula and Mushroom Surprise Salad


You know how day after day we pass by the same thing on the street, or the same thing on the way to work but never really see it? Yeah, well apparently I do that a lot. Over the week-end I had stopped by Trader Joe's and picked up a couple of bags of greens. One bag was their organic arugula. Arugula has a slightly bitter peppery flavor and it comes across as one of those greens that people seem to love or hate, with not too many in between. It goes well in pasta and rice dishes, salad mixes and again, great on it's own.

Later that day I pondered what to make with it. When taking the bag out of the fridge I noticed a recipe on the back. Oh my goodness I thought, has that always been there? I checked the other bag which was mixed baby greens and herbs, and sure enough there was a different recipe on that one to. Well I'll be.......To my defense, I have to tell you that most of the time I buy my greens at the farmers market not in a prepackaged bag, so I guess I never really noticed. Anyway, the recipe was fantastic and a total surprise.

Recipe has been slightly adapted from the back of the prepacked arugula from Trader Joe's.


Ingredients:

7 ounces Trader Joe's Organic arugula
2 ounces shiitake mushrooms (sliced)
4 ounces crimini mushrooms (sliced)
1/4 cup white wine
1 tablespoon shallots (minced)
1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
3 tablespoons walnuts (chopped)
1/4 cup crumbled feta

To prepare:

Saute shallots in olive oil until translucent. Toss in mushrooms and cook until almost tender, add wine and cook until liquid has almost evaporated. Transfer to a large salad bowl. Add arugula and toss with warm mushrooms, add balsamic vinegar and walnuts, lightly toss. Top with feta.

Serves 4.

  1. This salad sounds absolutely delicious! I've used arugala as a topping before, but never in a salad by itself, I'll definitely have to try it!

  8. Now I want to rush home and check the back of my bags to see if there is a recipe! That's so neat. I cannot tell you how obsessed I am with arugula. I seriously make an arugula salad 3 times a week. I just discovered it a few months ago and I can't. stop. eating. it!

  9. Sounds like the perfect recipe to me. I figure they wouldn't print it unless it was a favorite - because of course they want you to buy more. We planted arugula in our garden last year and couldn't keep up. Lots and lots of arugula everywhere! Yum
