Banana-Nutella Swirl Cake


Some days it's nice to take a break from the ordinary. Even little things like fixing a cup of coffee or tea in the afternoon can be delightful. Taking that drink outside to sit and daydream can be even better. The recipe today is special like this. A little different but not in an outrageous way. It is also noted that this batter makes a great cake base, meaning you can easily change up the flavor.

I first saw this banana cake in a post I received from Portuguese Girl Cooks blog. The title grabbed me first, "Whole Wheat Banana-Nutella Swirl Snack Cake". After reading that this little cake takes all of 15 minutes to put together I was hooked. The ingredients listed were more on the healthy side. There was whole wheat flour, coconut oil and yogurt. Noticeably missing was the butter. Right before you place this little beauty in the oven you swirl in the creamy-gooey Nutella. The outcome was moist and delicious. Give this a try next time and you won't be disappointed.

Ingredients:

1 1/2 cups whole wheat flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup coconut oil (melted)
2/3 cup sugar
1 large egg
3 medium mashed bananas
1/4 cup plus 2 teaspoons plain Greek yogurt
1 teaspoon vanilla extract
1/2 cup Nutella

To prepare:

Preheat oven to 350F. Grease a 8 inch square pan.

Whisk together the flour, baking powder, baking soda and salt in a medium sized bowl. Set aside.

In a standing mixer blend the coconut oil, sugar and egg until smooth. Then add and mix the yogurt, bananas and vanilla. Add flour mixture and mix until just blended.


Pour mixture into prepared pan. Lightly swirl in Nutella with a butter knife. Bake 25 to 30 minutes, cake will be golden. Done when inserted toothpick comes out clean.

  2. I love how this uses whole wheat flour--it's healthy enough for breakfast right? :) Nutella always makes banana bread/cake better.

    I love the idea of doing something differently, especially in the middle of the week.

    Once again we are on a similar wavelength when it comes to recipes. While I didn't post it on Gathering Flavors, my family just had a banana cake for breakfast! I love the idea of adding some Nutella to the mix next time. My son is a big Nutella fan and he'll be home from university soon, so I think I'll make your recipe for him then. But, come to think of it, we have some Nutella in the pantry so I won't have to wait... I think I'll spread some on a piece of my banana cake later this morning, for a work break, take it out on to the porch with some coffee. Smell the newly planted pansies and lilies in the garden.

  13. As you know, I made a similar cake to this recently with peanut butter, but I'm really keen to try it with nutella now next time. I've just 'rediscovered' nutella and started putting a swirl of it in my morning oatmeal (naughty but nice) so why not swirl it into a cake?
