Green Salad with Walnut Vinaigrette


It's that time of year when we all start thinking about our summer wear and how we feel in it. I always thought that as long as I fit in last years clothes I'm fine, but after a visit to the doctor for an annual visit I am convinced otherwise. It's important for all of us to look at a five year window and to take notice. Time passes by so quickly as we move through our life events and are really just trying to keep up. I am fine......just saying pay attention.

Today's post is all about this simple salad. Basically all my favorite ingredients with a few dried raisins and walnuts. By the way the walnut vinaigrette is wonderful.

Ingredients:

For Vinaigrette:

1/4 cup red wine vinegar
1 tablespoon maple syrup
1/4 cup olive oil
1 to 2 tablespoons water
2 teaspoons shallots
1/4 cup walnuts (chopped)
salt and pepper to taste



For salad:

1 bunch romaine (chopped)
1 large head broccoli (chopped)
1/2 green granny smith apple (sliced thin)
1 handful golden raisins
1 handful pea sprouts
1 handful walnuts (chopped)

To prepare:

For vinaigrette:

Add all ingredients in food processor, pulse until combined. Adding 1 tablespoon of water and then another if needed.


For salad:

Add all ingredients, mix with dressing and serve.

Mysavoryspoon was first started in 2010 as a way to journal recipes that I had collected from cookbooks, magazines, family and friends. Most everything was savory, using legumes and whole grains.   11. This salad looks delicious! I am never short of greens and beans and things to put in a bowl, but when it comes to dressings I am at a loss. I will definitely be picking up some walnuts at the market this weekend. And we do have to pay attention to our bodies. In a positive and nurturing way. We only get one of them :)

I will definitely be picking up some walnuts this weekend to try out this gorgeous vinaigrette. Also, we do have to pay positive, nurturing attention to our bodies. After all, we only get one!

  16. I love the maple syrup in the vinaigrette - with walnuts too. I bet it is so tasty. It doesn't pay to ignore the scale and tight fitting clothes. I know from experience it can get out of hand quickly. Love this beautiful salad. Hope you have a wonderful Mother's Day!
