Peach Crisp


Life is interesting. It's funny how we look at things differently. My Aunt and Uncle came up for a visit. We all sat around the table after a late lunch as we always do talking the time away. Our conversation ventured over to health concerns. My Uncle started talking about how using a cane or walker would only lead to more assistance and weakness on his part. My Aunt's thoughts were that these particular items gave people needed assistance which gave them more freedom and mobility. I was struck by the difference.

This is a great dessert for entertaining. You can make this ahead of time and use whatever fruit is in season. It's one that everyone will love. We enjoyed this warm with a scoop of vanilla ice cream. Re-heat slowly in a 300F oven.

This recipe has been adapted from the blog, Orangette by Molly Wizenberg.


Ingredients:

For the filling:

2 tablespoons dark brown sugar
1 1/2 tablespoons all-purpose flour
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
4 to 5 peaches, depending on size of peaches

For the topping:

3/4 cup organic sugar
1 cup all-purpose flour
1/2 teaspoon ground cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
1 egg, beaten
7 tablespoon unsalted butter, melted

Preheat oven to 375F. Lightly butter a 9" x 13" dish.

Core and slice peaches, add to prepared baking dish. In a mixing bowl whisk together the brown sugar, flour, cinnamon and ginger. Pour over peaches and gently stir to coat.

In another bowl prepare the topping. Add sugar, flour, cinnamon, baking powder and salt. Whisk to blend. Add egg, mix completely. Using fingertips, squeeze and press mixture together, then add half the butter creating moist clumps, Spoon evenly over peaches. Then add the rest of the butter. Bake 30 to 35 minutes, until the top is browned.

Makes about 6 servings.

  5. My Dad feels the same way about getting a hearing aid. He thinks that he will be fine for a little longer (he has industrial deafness from years of workshop jobs) and then he will be able to accept its help.
    Hearing aid or no, I know he will absolutely love this dessert when summer finally rolls around :)

I think there's a marked difference between using a tool (like a cane) to help you (while still challening yourself, as appropriate), using a tool to your detriment (like your uncle mentioned), and totally avoid tools to your detriment. Finding the perfect mix is the tricky part! But everyone can agree that eating this crisp is the right choice to make :-D Looks delicious!

  11. My dad uses a cane, and sometimes a walker. He'd never get out if he didn't have either one of these -- they do help him keep his balance. Anyway, such a nice dish -- thanks so much.

  21. in wisconsin, we had apple trees, so i grew up on apple crisp. yum!

    your uncle's view on canes is interesting. i feel the same way about eyeglasses. i resist using them because i feel certain my eyesight gets weaker. i have a pair i use for night driving, only. :)

  23. Years ago, after the cast was removed when I broke a leg, the doctor told me to graduate to a cane. My father was appalled! When he first saw me with the cane, he said I would come to depend upon it and never give it up. Of course, that wasn't the case, but what was funny...I was only 40 at the time.
    Loving the peaches right now...have a recipe coming up next with them.

  26. I love crisps of all kinds, especially in the summer. Best of all, it looks like a wonderful little dessert that can come together quickly. We've got company coming to visit us up in Tahoe over the LDW, and this will make a perfect dessert for us :-)
