Strawberry Toast


There is a coffee shop in Yachats Oregon that we frequent quite often. It is called the Green Salmon and the place in town where many of the town locals hang out. The atmosphere is quite eclectic, which you would expect for a quirky little setting and most everything on the menu is vegetarian.

This is where I first had strawberry toast. They take a slice of whole wheat bread, toast it, mix honey into cream cheese and top with sliced strawberries. When strawberry season ends a combination of berries is substituted and it is just as good.

Hope you enjoy this, it’s a wonderful breakfast that is lightly sweetened with honey. Perfect with your morning coffee or tea. Simple and delicious!

Makes 2 servings

Ingredients:

2 slices of whole wheat toast
1/3 cup whipped cream cheese
1 teaspoon of honey
8 to 10 strawberries (sliced) (depends on the size)

To prepare:

Mix cream cheese and honey together, spread on toast. Place sliced strawberries or berries of your choice. Enjoy!

  5. What a great idea! Two weeks ago - when I bought too many strawberries at the market - I made jam. I need to try this simpler version!

  19. I'm really enjoying strawberries (and asparagus!) right now, too, Cheri. I made waffles with strawberries yesterday...have never had or thought of strawberry toast! Looks great and love being inspired by something you had at a good restaurant.
