Winter Citrus Salad
One of my favorite things about winter is the citrus we have at our fingertips. What citrus I can’t find close to home, I can find at the local farmers market. For today’s post I thought I’d share a simple citrus salad. A salad that is so simple it’s almost a crime to write down an actual recipe. You can mix up the fruit, add or substitute a tangerine, clementine or another variety. Add another type of green, sprinkle with fresh coconut; the variations are endless.

Hope you have a chance to enjoy this deliciousness yourself, it’s almost a guarantee to chase those winter blues away. As an added plus they are loaded with vitamin C and other disease fighting antioxidants.

Winter Citrus Salad

Brighten up your cold winter day with a colorful citrus salad. It’s refreshing, tart, juicy and sweet.
prep time: 25 MINScook time: total time: 25 mins

INGREDIENTS:

  • 2 grapefruits
  • 2 Cara Cara oranges
  • 2 blood oranges
  • Handful of watercress
  • Radish sprouts for garnish
  • 1-2 teaspoons honey (for drizzling)

INSTRUCTIONS:

  1. With a knife, slice off the stem end and the bottom end of the fruit just until you can see the flesh/fruit. Cut away the peel and white pith of the citrus, then slice into rounds.
  2. Place the individual citrus slices on plates. Add watercress and garnish with radish sprouts. Drizzle with the honey.

  13. As I said on Instagram, this is my all time favorite salad. Although I use a vinaigrette on mine, made with orange juice. It's gorgeous too, makes such a lovely presentation!

  14. I've been drooling over this since I saw it on Instagram - so beautiful and delicious sounding! I had my first cara cara orange when my husband and I visited Phoenix in late December - total game changer. Now I'm on the lookout for them because of how delicious they are :)

  15. One look at that salad and who wouldn't smile. I'm sure it would be terrific with any combo of citrus. Since all of the citrus trees in my neighborhood are dripping with fruit I don't see any excuse not to find out. GREG
