Homemade Vanilla Bean Ice Cream
A few hours ago I stopped at the local whole foods to purchase some pacific dover sole that was advertised. The guy behind counter says to me; “crazy story” and went on to tell me since the storms have been so bad in the PNW (pacific north west) the fishing boats were not going out as planned and because of this they are not receiving their desired shipment. He then added that customers have been getting angry at him because he could not deliver. Since we spend our summers on the coast in Oregon I have seen first-hand that fishing and bad weather is not a good combo. Felt sorry for the guy.

Now one thing that I do love to do when it’s crazy cold outside is to eat ice cream and that might seem strange to some. And maybe even stranger to some for me to make and then post about it. But in full disclosure I did buy myself an ice cream maker for Christmas. So it’s all perfect timing:) Maybe there are others out there that do the same when purchasing holiday gifts, two for him and then one for me, you know those kind of gifts. The kind that get us through the holidays. Anyway now that I have finished my very first batch I am so glad I did. Homemade ice cream is the best!!

Since I have an Kitchen Aid stand I decided to purchase the ice cream attachment. Not ready to make judgment on this gadget yet, want to try a few more variations. Next on my list will be a grapefruit or lemon sorbet as both of our citrus trees are having a banner year.

Homemade Vanilla Bean Ice Cream

Homemade Vanilla Bean Ice Cream

INGREDIENTS:

  • 2 1/2 cups half-and-half
  • 8 egg yolks
  • 1 cup sugar
  • 2 1/2 cups whipping cream
  • 1 teaspoon vanilla extract
  • 1 large vanilla bean, cut open lengthwise and scraped with a sharp knife
  • 1/8 teaspoon salt

INSTRUCTIONS:

  1. In medium saucepan over medium heat, heat half-and-half until very hot but not boiling, stirring often. Remove from heat; set aside.
  2. Place egg yolks and sugar into the Stand Mixer bowl. Attach bowl and wire whip to mixer. Turn to Speed 2 and mix about 30 seconds, or until well blended and slightly thickened.
  3. Still on Speed 2, gradually add half-and-half; mix until blended. Return liquid mixture to medium-sized saucepan; cook over medium heat until mixture is steamy and almost boiling, stirring constantly.
  4. Transfer half-and-half mixture into large bowl; stir in whipping cream, vanilla extract, seeds and salt. Cover and chill thoroughly, overnight if possible.
  5. In assembled Kitchen aide stand turn to stir speed one. Pour mixture into freeze bowl. Continue on Speed 1 for 15 to 20 minutes or until desired consistency is reached. Immediately transfer ice cream into serving dishes, or freeze in an airtight container.

  3. There are different habits all over the globe and people from northern parts have taught me to have the ice cream when it's freezing out and mild tea during the heat wave. If true, you are doing the best possible thing :-) And yes, vanilla is one of favourite ....

  7. What a great gift you bought for yourself, Cheri! It's been so cold here this past week but have we eaten ice cream - yes! There is nothing like a good vanilla ice cream to top a piece of pie or pile with beautiful fruit like you did.

  8. It's not crazy at all, Cheri! Ice cream - like chocolate - should have no season. I had one winter where I was making a ton of ice cream, too. I say just go with your cravings. : ) Hope you had a wonderful holiday. Happy New Year and hope it's a great one!

  9. Well, it may be around 13 degrees today, wind whipping, chilling to the bone, still, why not ice cream? Looks delicious to me, and a lot more desirable than One. More. Smoothie. Love the fruit too. Sorry to the fish guy too.

  11. What a fun gift you bought yourself, Cheri! I love my gadgets too, but I don't have an ice cream maker...hmmmm. Your ice cream looks delicious and vanilla bean ice cream can go with so many things, but I think it's the best with chocolate cake :)

  14. Similar troubles brew in Japan regarding fish...Very sad...But ice cream in any season makes me happy. Nice to know there's an attachment for ice cream making on the KitchenAid!

  15. I am anxious to hear your option on the attachment. I have a Cuisinart Ice Cream maker that I love and I'm with you - ice cream is great anytime - weather or not it's hot outside! Poor fish guy :(

  16. vanilla bean ice cream is my favorite to eat plain or with pie or cake and the like--nice choice! i'm jealous of your christmas purchase--i've been after an ice cream maker for years, but no one will get the hint. i suppose i might have to take a cue from you and buy one myself!

  17. Sounds like smart Christmas gifts!! We got an ice cream maker last year for Christmas, and used it non-stop til taking our first break a month ago. It's all so good! I must confess though, we haven't tried an egg based ice cream yet.

  18. My husband could eat ice cream any time, day or night. Me, not so much! But when I do I love home made ice cream. My son is the one that commands the machine, so unfortunately we haven't had any lately! But this looks so good!

  19. Cheri....you and I are kindred spirits cuz there are two things I eat all year long no matter what the season.....soup & ice cream! I love a simple vanilla bean ice cream. So many things to top it with. Have fun with your new ice cream maker. I love that stage when the ice cream is done but you haven't put it in the freezer yet....just like soft serve! Going to look at your chicken and rice soup now!

  21. I actually laughed out loud, Cheri, when I read that you like to eat ice cream when it's cold out! Mark will only eat ice cream for about two weeks a year when it's absolutely at its hottest in Tucson! I'm not sure if he ever touched it when we lived in New England. I'm anxious to see what you think of the attachment – I have the Cuisinart version and it's just OK.

  22. Locally a new ice cream shop opened up in November! So I know ice cream is a year round treat! Vanilla bean is a fabulous flavor. It stands alone and also makes friends so so many other companions!

  25. I had so much fun making ice creams last fall. Overdid it a little (not to mention those holiday lbs) so am taking a break right now. But I didn't like the vanilla recipe I tried so am on the lookout for a new one. Thanks for sharing!
