Skillet Roasted Lemon Chicken
Spring signifies the ending of citrus season in Arizona. The weather is heating up and the fruit needs to be removed from our trees. We literally pick bags and bags of grapefruit and lemons. Since there are so many citrus trees in our neighborhood, many of us set out our extra fruit in front of our homes. This way other neighbors and passerby’s can pick and choose what they want.

Lemon is the theme of this week’s Sunday Supper club. Since chicken is traditionally the norm for our Sunday dinner and lemon pairs so well with it I decided to prepare a family favorite. Leftovers are always great for lunch the next day. Chicken is perfect cold on a salad or sandwich. This time I paired my chicken with roasted lemon fingerling potatoes and steamed green beans. Savor the season by taking the time to enjoy family and friends. xo

Skillet Roasted Lemon Chicken

Skillet Roasted Lemon Chicken. Savor the season by taking the time to enjoy family and friends.

INGREDIENTS:

  • 3 medium lemons, divided. zest and juice 1, slice and remove seeds on the 2 remaining
  • 5 tablespoons olive oil, divided
  • 3 to 4 pounds chicken, cut into pieces
  • Salt and pepper
  • ¼ cup dry white wine
  • 8 to 10 sprigs thyme
  • Handful of chopped fresh flat-leaf parsley for garnish

INSTRUCTIONS:

  1. Preheat oven to 425°.
  2. In a large skillet add olive oil and then lemon slices from 1 lemon, roast in oven until browned approx. 15 to 20 minutes. Remove from pan, set aside.
  3. Combine 2 tablespoons of olive oil, zest and lemon juice in a small bowl. Rinse chicken pieces; pat dry. Place chicken in roasting pan. Rub or brush the lemon olive oil mixture all over. Season with salt and pepper.
  4. In the same skillet on medium-high heat that you roasted the lemon slices in add 2 tablespoons olive. Place chicken pieces skin side down. Sauté until skin is browned, about 15 minutes. Turn chicken pieces over and add uncooked lemon slices, wine and thyme to the skillet, place in oven. Bake approx. 40 minutes, until juices run clear when poked with a knife

  15. It's funny Cheri because I tried to do a shortcut and roasted a prepared spatchcock chicken marinated with lemons and herbs for lunch yesterday. It did not turn out so well texture-wise and I thought to myself, I'll have to do the marinating work myself if I want a better tasting version. This sounds like just the thing!

  16. Your chicken looks yummy. One of my favorite meals to make…it is nice for a Sunday supper. All the citrus plants in our town have their boxes stored and their trucks and trailers parked as the citrus has all been picked in our area. It is all in their cold storage, ready to be shipped to other parts of the country.
