Simple Summer Salads



Our garden is nestled at the bottom of our property protected in part by the trees. This is our second year of vegetable gardening so we are learning something new every step of the way. But the one thing that is absolutely certain is that lettuce grows very well here. This past week we have had a simple garden salad every night with our evening meal. It is really amazing to cut the greens, wash the greens and then eat the greens......What made each salad different or relate more to our meal was the type of dressing I tossed with each salad. All were very easy to pull together, even the blue cheese dressing I made last night.


Here are a few of my dressings, all are for 2 people
Red Wine and Olive Oil
Ingredients:
2 Tablespoons red wine vinegar
2 Tablespoons of olive oil
1 Garlic clove minced
1/2 teaspoon vinegar
Sprig of fresh basil
Salt & Pepper
Whisk together all ingredients, then toss!


Lemon, Garlic and Olive Oil
Ingredients:
1/2 Fresh squeezed lemon juice
1 Garlic clove minced
2 tablespoons olive Oil
Salt & pepper
Whisk together, then serve.


Blue Cheese Dressing
Ingredients:
3 ounces good quality blue cheese
1/4 cup heavy cream
1/4 cup mayonnaise
1 tablespoon white wine vinegar
Salt & pepper
I made this in the food processor, this makes more than you need, so refrigerate the extra.

Mysavoryspoon was first started in 2010 as a way to journal recipes that I had collected from cookbooks, magazines, family and friends. Most everything was savory, using legumes and whole grains. Along the way I discovered a love for baking. Now a couple times a month you might see some type of sweet pie or treat.
