Sweet Corn, Arugula and Red Onion Salad







Can't get any better than this, fresh corn, red onion and arugula from our garden. Had this salad before at our neighboring Whole Foods Market. Incredible fresh flavor and ease to prepare make this dish a summertime favorite.Can't remember if they used fresh Basil or Thyme, I bet either would be fine.  

Ingredient List as follows:

2 Corn on cob
1/4 red onion sliced very thin
1/4 lb fresh arugula

Vinaigrette that I used
2 tablespoons white wine vinegar
2 tablespoons good olive oil
1 teaspoon fresh thyme (or basil)
season with salt and pepper

Pretty straight forward, cut corn from Cobb, add fresh red onion and arugula, mix in vinaigrette dressing. This is so fresh, after enjoying this you will never forget these ingredients, they are such summer winners. Enjoy!!!
