Avocado, Hearts of Palm and Red Onion Salad



Back in the desert and man is it hot! Were having a hard time sleeping at night and apparently this is one of the hottest Octobers on record. It is difficult to want to turn on the stove, so last night I fixed us a light salad.  Haas avocado and hearts of  palm are the stars of the show. Hearts of palm is similar in flavor to artichokes, and often served in salads. I found this product at Trader Joe's in the jar form.




Ingredients:

Salad:
1 ripe Haas avocado, cut into chunks
6 pieces hearts of palm sliced
1/4 of red onion sliced thin
5 cups mixed baby lettuce

For Vinaigrette:

1/8 cup of cilantro
1 small clove of garlic
2 tablespoon fresh lemon juice
4 tablespoons of extra virgin olive oil
Pinch of sugar
Salt and pepper

To make vinaigrette:
Blend cilantro, garlic, lemon juice,sugar, salt and pepper together. With blender motor running add olive oil and blend until emulsified.

For salad:
Mix lettuce, avocado, hearts of palm and red onion together. Toss gently with vinaigrette. Enjoy!

Mysavoryspoon was first started in 2010 as a way to journal recipes that I had collected from cookbooks, magazines, family and friends. Most everything was savory, using legumes and whole grains. Along the way I discovered a love for baking. Now a couple times a month you might see some type of sweet pie or treat.
