Organic Raw Broccoli Salad with Dried Cranberries and Sliced Almonds

Lately raw vegetables have been very appealing to me. Not sure if it's because of all the processed and sugary foods I have been consuming but it's time to take control of my eating habits and portions once again. This salad is delicious, crunchy and healthy.


Ingredients:

Medium crown of broccoli (Sliced thin)
3 to 4 stalks of celery (Sliced thin)
3 green onions (Sliced thin green part only)
Large handful of dried cranberries
Small handful of roasted sliced almonds
1/4 cup of low fat mayonnaise
2 Tablespoons of white wine vinegar
1 teaspoon of sugar

To prepare:

Combine broccoli, celery, green onions and dried cranberries. Mix mayonnaise, white wine vinegar and sugar together. Add to veggies. Eat right away so veggies retain their texture and freshness. Notice there is no salt, absolutely none is needed, you'll see. Enjoy!
