Carrot Walnut Cookies


Sunday was another great day but not without it's challenges. After having months of computer problems, the hubs and I decided to upgrade my computer. While the whole concept sounds relatively easy and filled with fun there is a lot of trepidation about the whole process. Now I am using two computers to do the work of one but I am sure it will all change after a class or two at the Microsoft store. I was assured in the end that new will be more simple. What? This is simple? Okay!

Now take this cookies, these really are simple. The cookies are moist and packed full of flavor. They are egg - free, vegan and sweetened with dried fruit and flecked with carrots, banana and apple. The oats give structure and help hold them together while the cinnamon sings throughout this cookie. While excellent anytime to me this little treat is all about breakfast.

I came across this recipe on the Wholefoodsmarket.com website. Followed recipe to a T. Next time I might add some shredded coconut but all in all these were simple to make and not too sweet. Enjoy!

Ingredients:

1 cup raw unsalted walnuts
1 cup rolled oats
1 cup raisins
1/2 cup whole-wheat pastry flour
1 1/4 teaspoons baking powder
1 1/4 teaspoon cinnamon
1/2 teaspoon ground ginger
2 carrots (grated)
1 apple, grated
1 very ripe banana, (peeled and mashed)
1/4 cup unfiltered apple juice

To prepare:

Preheat oven to 350F. Line baking sheet with parchment paper or use silpat.

Combine walnuts, oats and raisins in a food processor and pulse until finely ground.


Transfer to a bowl and stir in flour, baking powder, cinnamon and ginger. Add carrots, apple, banana and apple juice and stir until combined. Drop by rounded teaspoon an inch apart on prepared baking sheet. Use back of spoon or fork to flatten each cookie slightly. Bake until tops and bottoms are lightly browned, about 20 to 25 minutes.

  2. I HATE upgrading my computer. There's always some program I really want that gets lost and then I have to buy it again and that gives me the grumps. I would like to have these cookies instead too.
