Baked Kale Chips


So hard to believe that it's almost Autumn. It's time to start harvesting all the goods in the garden as we will be heading back home in less than 3 weeks. Today I decided to start with the kale. You can see by the picture above that this one veggie alone will take some time. This is the same kale that I had the problem with the beginning of the summer. If you remember some little varmint was getting into my garden and chewing the end of the kale stems. He would then try to drag them down a small hole. So I kept burying the little holes and I bought and planted more kale, maybe a little too many. I showed him. Maybe.........


I made these kale chips today even though the temperature on the coast was very warm. Not sure why I have not made them before as they are delicious and easy to prepare. I followed the recipe very closely except I added a teaspoon of soy sauce to the mix, which my husband and I enjoyed. I had to make two separate batches. The first batch I added a little too much olive oil and tore the leaves a little too small. The second time I tore the leaves into three inch pieces, taking into account that they will shrink.


The kale turned out crunchy like a chip and had a soy and sesame flavor. It's hard to measure out exact amounts for this recipe. One bunch of kale is about one pound or four to five cups. Leaf size can also make a difference. Use your own judgement.

Ingredients:

1 bunch kale (cleaned, dried, remove stems and tear into 3 inch pieces)
1 tablespoon lemon juice
1 teaspoon soy sauce
2 tablespoon olive oil (divided)
1/4 cup sesame seeds

To prepare:

Preheat oven to 200F.

In a large bowl add kale and lemon juice, massage leaves until softened, a minute or so. Add 1 tablespoon olive oil and soy sauce, mix with hands if more olive oil is needed add the other tablespoon and then the sesame seeds.


Place on baking sheets in a single layer (will need two sheets for this amount) and bake for 20 minutes. Remove from oven, turn with spatula and place back into oven for another 20 minutes. Check leaves, if not quite crisp turn oven up to 300F and check every couple of minutes. Watch carefully, will not take long. Enjoy!

  3. Even the vegetable hating kids love kale chips, they are such a great snack. I love the soy and sesame. I've never done that before. Will try it next time I make them.

    I have never added sesame seeds..

  7. First, sad to hear your leaving the Northwest before October. I like this recipe and will try. Just canned 10 pints of crushed tomatoes from the garden. I'll bet you could do wonders with a pint or two!

    Kudos on outsmarting the varmint... for now. ; )

  8. We planted a lot of Kale this year, and I wanted to make chips, but some bug got to all of them. Your recipe sounds delicious! I will save it to try again next year!

  10. I baked some kale chips last year and it must have been an icky batch of kale because they were so bitter I dumped them all in the trash.

  12. My kale is so abundant its toppled over. I am sharing it with caterpillars at the moment and don't want to deprive the future butterflies of food. However I might just make some of these kale chips :)

  13. I've been making kale chips as well, Cheri, and love them! I haven't added soy sauce or sesame seeds though so will try that next time. Now what will you do with all your kale? lol.

  14. I love kale chips but have only made them with dinosaur/Tuscan black kale. Never thought to try other varieties - thanks for that idea! I also love the soy and sesame addition! Can't believe you will be back in the desert in 3 weeks! Time has flown!

  15. I would make these disappear so quickly, Cheri. I just bought some kale this morning at the farmer's market. I've never made chips and didn't realize they were baked at a low temp...makes sense! P.S. - I'm a big fan of Martha...love the videos and such. :)

  16. Kale chips are one of our favorite weekend snacks - it's fun how you can change them up with different seasonings. (We often sprinkle nutritional yeast on them for a cheesy taste).

  19. Love kale in soups, have never tried making chips with it. Looks easy and at least I won't have to worry about varmints stealing it away as I buy mine at the farmer's market!
