Fresh Fig Spread


The last few days have been foggy. I love the mystique and the mist that comes along with it. The picture above is of Seal Rock. We drive by this state park on our 25 mile trek to Newport where all the shops and action is.

Anyway, quick post today about the fig spread that I made for a little get together. I cleaned and quartered the figs and then cooked them on the stove top with water and sugar for about 45 minutes. Cinnamon and fresh lemon juice were added and gave the flavor a little tartness and spice. The consistency was thick and jammy. We served it along with a cheese plate and a baguette. It was very easy to prepare and I must say was a hit.

Ingredients:

12 to 15 fresh figs (rinse, dry and quarter)
¾ to 1 cup water
¼ cup sugar
Pinch of cinnamon
1 teaspoon fresh lemon juice

To prepare:
In a medium sized pot add figs and water. Use ¾ amount first, if more is needed, can add later. Cook until boiling, add sugar and stir.


Turn down heat to low, cover and simmer about 45 minutes or until figs are soft and jammy. Remove from heat, add cinnamon and lemon juice, stir. Cover pot with a kitchen towel (to absorb condensation) and let cool completely.


Spoon into glass jar, seal and refrigerate. Good for 7 to 10 days.

  7. I must try your spread. Normally I purchase it. How wonderful to have fresh figs in your backyard! There is a nice restaurant we visit that, for lunch, serves a fig spread over goat cheese sandwich and it is wonderful.

  17. This spread sounds lovely with some crackers and cheese - yum! I have been loving the cool morning fog here as well. Your pictures of the foggy beach are just beautiful. I can almost imagine myself there (wishing a little...). I posted a beach picture and mentioned the fog on my 9/11 post as well. Guess we are on the same wave length this week : )

  18. I know this spread - very similar to my fig jam! I used to make 20+ pints of it every year when I could go to the Boston Haymarket and get crates of figs for almost nothing!

    Also love the fog shots. While I hate a cloudy day (so Arizona of me), I adore foggy days. They are so romantic and mysterious! Enjoy them!

  24. You have fresh figs already? I just love them. Must start looking for cake recipes to be able to use them when they get to the shops here. Have to admit, I haven't tried them with spices (or at least I don't think so). Will keep your combination in mind for next time!

  29. Those pictures are making me want to come visit the beautiful Oregon Coast again - it's just so beautiful! And the fig spread sounds delicious - I now need to go hunting for figs because I can never seem to find them, and then poof the season is over, so I will definitely be on the lookout for them!
