Avocado Toast and Superfoods


This post has been inspired by Oscar Health insurance company. Recently I was invited by Andrea the outreach coordinator to write a post about my perspective on superfoods. Oscar health insurance company and New York and New Jersey health insurance plans use technology to take the stress out of healthcare. The plans defer from state to state but most plans give you free preventive care and a doctor on call tool that allows members to reach out to a team of doctors and nurses. Preventative care, exercise, stress and the kinds of foods you put in your body are all important factors in being as healthy as you can be.

So when I began my research about superfoods I quickly came to the conclusion that it depends on who you ask. Everyone has a slightly different idea. Next I decided to look-up the definition of what is a superfood and that also depends on what source you use. What I came to realize is that eating a well-balanced diet that consists mainly of dark green, bright and intense colored veggies, nuts, seeds, berries, citrus fruits and fatty fish is a good way towards staying on the right path. A big part of the way I cook comes from following the seasons. I believe that certain times of the year and in different climates food fuels us through that season. For example, watermelon brings more water to our bodies in the summer and so on.

One of my favorite I foods is the avocado. Prevention magazine refers to it as the world’s smartest fruit. A diet rich in this creamy delicious fruit can help your waistline, your eyes, memory and blood sugar. A couple of mornings a week I will have a simple breakfast of whole wheat toast topped with mashed avocado. Sometimes I will top with a sliced hard-boiled egg and sprouts. Other times with cucumber and sprouts. I have made guacamole, sandwiches, puddings, ice cream and salads. My sister and I will even to this day fight over them……..

I wanted to share my thoughts on the above "avocado Knife" that my daughter bought for me a couple of years ago. It is a Kuhn Rikon made in Switzerland and it is an awesome gadget. This cuts through the skin, takes out the pit, removes the flesh......everything.

Mysavoryspoon was first started in 2010 as a way to journal recipes that I had collected from cookbooks, magazines, family and friends. Most everything was savory, using legumes and whole grains. Along the way I discovered a love for baking. Now a couple times a month you might see some type of sweet pie or treat.

  1. I love avocado toast and superfoods, they're definitely amazing :) Also I love that avocado knife, I recently got one made by a different company and it is such a lifesaver :)

    I love avocados and I would eat them with every meal except that certain family members are, regrettably, allergic to them. While others of us can eat them, I make it a policy to serve only items that we can all eat.
    You are right in that the jury is out as to what is a superfood and what is not. A lot of it is fashion. It seemed like for a while there were seeds in everything and we all couldn't get enough quinoa.

    I am with you in that I think it is best to eat with the seasons. I like meals that are full of fresh, seasonal vegetables and fruits with smaller portions of meats to accompany them.

  5. I could eat avocado toast for breakfast, lunch and dinner, so relish! I think balance is probably the most important aspect of healthy eating. Superfoods seem to come and go in popularity but eating fresh, local (when possible) and seasonal is the best policy to me.

  9. Both my husband and I love avocados but I tend to use them mostly in salads and for guac. I've got to start the morning with some avocado toast soon! I also think unsalted nuts are a pretty awesome super food.

  10. I think it's great to eat whole foods as much as possible and eating seasonally is very sensible. That said, I make room for a little dessert, too. : )

  16. One more try (please delete the first comment): Dear Cheri, lots of "superfoods" out there but I agree with you and the other people who commented, avocados are very hard to beat - I also enjoy them on wholegrain bread with a tiny trickle of my favorite cold-pressed oil!
    Interesting and fun gadget from Kuhn Rikon too!

    I'm not very fond of avocado but slowly learning to appreciate this healthy fruit ... Occasionally added some in salads or blend with fruit juice. The avocado knife looks special.

  18. A+ research, Cheri. You've motivated this Ninja Baker to pick up an avocado...Who doesn't want to have better memory, eyesight and balance blood sugars? (Especially after the cookie monster comes out!) P.s. Love that you follow the seasons like the Japanese. P.s. 2. Along with the avocado, I'll look for intensely colored foods at the market next time. Do colorful cartons of Ben & Jerry's count? tee hee

  19. Mmm love avocados and don't know why I haven't tried it on toast. I would love that and topped with sprouts sounds great. I try to keep our own sprouts growing indoors year round but this summer was so hot I was a little leery so will be getting back to them now with cooler temps.

  21. I think people don't abuse the term 'superfood" calling trendy food "superfood". And then there is a whole industry behind that that is concerned more about $ than health. So I myself always try to be critical about new superfoods that pop up.

  29. I absolutely love avocados and have heard that they are one of the best things you can eat. Your avocado toast looks delicious! Have you ever eaten at First Watch? They have the absolutely best avocado toast if you are ever going out for breakfast. Ever since I ate it there, I have wanted to make it. Thanks for your ideas on things to add to it, Cheri!
