Thanksgiving in a Sandwich


Hope everyone had a wonderful holiday, I know we sure did. We drove down to Tucson and spent the day with family and friends. My daughter and son-in-law prepared two turkeys, one was smoked and the other baked traditionally in the oven. Both were delicious in their own way. The weather was perfect so we ate outside on a long, long table. (Remember this is the winter in Phoenix, Az)

Today, the day after the big feast we start compiling our leftover Thanksgiving sandwiches. The kind of bread used for this long established day after event is a loaf of country white or sourdough bread from the local bakery. After the mayo is applied; a layer of dressing, turkey and cranberry sauce is added. What you end up with is a sweet and savory handheld goodness that is just as good as the big meal the day before. Have fun creating your own special sandwich with leftovers. Hope you all have had a wonderful holiday!

Mysavoryspoon was first started in 2010 as a way to journal recipes that I had collected from cookbooks, magazines, family and friends. Most everything was savory, using legumes and whole grains. Along the way I discovered a love for baking. Now a couple times a month you might see some type of sweet pie or treat.

  1. I am really wishing we had more turkey leftovers! I did have enough for turkey noodle soup tonight but I'm craving a sandwich! : ) Glad you had a lovely Thanksgiving.

  3. So glad you have a lovely Thanksgiving. We did and even had some of your warm weather - I think it was 67 degrees here in Virginia. Beautiful and tasty and I made a sandwich out of leftovers too! I think I could eat a stuffing sandwich myself. So good! Have a great weekend :)

  6. D'Angelo's has a sub called a "thanksgiving" sub that's like this - but it doesn't beat the homemade aspect of it. Nothing beats homemade turkey and cranberry sauce. I never thought about making it at home until the holidays rolled around - thanks for sharing, it looks great. :-)

    I am glad you had such a nice holiday with family. Thanksgiving outside. Wow....It was a bit too nippy here for outdoor dining but we had a warm holiday nonetheless.

    I love your sandwich tradition. The bread looks awesome and the fillings divine. I sent my son back to college today with a similar sandwich to eat the bus...I made homemade honey/wheat bread, added some harissa and mayo to each slice with turkey, cranberry chutney and a bit of lettuce in between. Great fun.

  17. I always have that sandwich the day after Thanksgiving and Christmas. It must be on white bread and include mayonnaise. Sooo delicious!

  19. The next day sandwiches are always the best to me! Last year I saw one online that used leftover turkey, dressing, cranberries and they added a slice of cheese and grilled it all - decadent but yummy as well.

  22. Turkey sandwiches are the best thing about Thanksgiving, lol. It's the one time per year that I allow myself to add chips to the plate, lol. They are a must with these yummy treats. I envy you being able to sit outside for the holiday, Cheri!
