Avocado, Tomato and Kale Sprout Sandwich


We fought the flu and the flu won. Just starting to get back on my feet again. Yesterday was my first day out and about. Being not quite myself I shortly realized that I was finding fault with everything. The city bus that passed was dirty, people were driving crazy and the parking lot where I shopped needed the garbage dumped. Normally I do not believe or think this way and when I realized it I laughed out loud, clearly not quite one hundred percent. This got me to thinking how it must feel to feel bad all the time, obviously I do not have the fortitude.

Check out the sandwich that helped me and hopefully will help you feel healthier, one of my favorites.

For 2 people

Ingredients:

4 slices of your favorite bread (I used whole wheat)
1 large avocado
1 large handful sprouts (I used kale sprouts from whole foods)
1 small tomato (sliced horizontal)

Other great toppings to add:

Sliced cheese, red onion, any type of lettuce, sprouts, chickpeas, cucumbers.

To prepare:

Scoop and mash avocado, divide into fourths, spread onto each slice of bread, add sprouts and tomato. Lightly press 2 sides together, cut into half. Enjoy!

Mysavoryspoon was first started in 2010 as a way to journal recipes that I had collected from cookbooks, magazines, family and friends. Most everything was savory, using legumes and whole grains. Along the way I discovered a love for baking. Now a couple times a month you might see some type of sweet pie or treat.

  2. I think this sandwich could help anyone. My doctor actually made me get the flu shot this year. Here is hoping that Manservant does not get the flu, because I am not a good nurse! Feel better soon!

  15. Glad to hear you're feeling better, Cheri. I know what you mean about all the little things getting under your skin when you're not feeling well. Good that you recognized that and could laugh at it. Life is so much easier when we can laugh at ourselves, isn't it? I love this sandwich - lots of flavor and crunch - delicious!

  16. Cheri -- nice to meet you and I hope you are getting better. This is totally one of my favorite sandwich combinations - avocado and greens. I like to throw in some cheese -- we eat it at least once a week. Sort of like health on a sandwich!

  17. Oh that flu has gotten to so many this year - so sorry it hit your house but glad you are feeling better. My daughter had it pretty bad (lost 10 pounds in a week!)but has rebounded nicely. This type of veggie sandwich is one of my favorites. I have never tried kale sprouts but grow sprouts in my kitchen most of the year - love them!

  22. When you're sick, it really reminds you that nothing matters quite as much as being healthy...and the feeling that you might never get better again is the pits. Hope you are well on your feet and feeling cheerful again. A healthy meal definitely sounds in order. I'll take a couple of these sandwiches any day!

  27. I'm so glad you are feeling better, Cheri! I know exactly what you mean about when you first go out after being sick. The first time I went out, half way through the trip I felt like I didn't have the energy to continue. It got better each day, though. I feel so sorry for people who don't feel good all the time, too. There are people that I see at the grocery store, that I am amazed they made it there. Anyway, sorry it took me so long to say that sandwich looks so delicious to me. I love avocado and sprouts. It reminds me of the sandwich I always order at Sprouts Grocery store. I am glad it helped you feel better!
