No Bake Chocolate Peanut Butter Bars


Hope everyone had a wonderful week-end. We had the whole family over and the kitchen was very busy. My fitbit logged over 8 miles both days and that was just around the house. Love that little gadget.

If you are a fan of anything peanut butter and chocolate, you will love these. They taste just like a giant peanut butter cup. I’ve made these many times now and they have always been a hit. These are quick and easy to prepare and there is no time in the oven. And to top that off only five ingredients are needed. Take it from me, these no bake bars will be a new family favorite.

This recipe is from Nagi of RecipeTin Eats. (Check out her site, it's amazing!)

Ingredients:

Base:

1 stick unsalted butter (melted)
1 cup crushed graham crackers between 8 and 13 (not all crackers are the same size, depends on brand)
1 cup of confectioners’ sugar
¾ cup peanut butter, (crunchy or creamy)(both kinds are good)

Topping:

1 cup of semi-sweet chocolate chips
2 tablespoons peanut butter

To prepare:

Butter and line with parchment paper a 8” x 8” baking pan. (Adding the paper will help lift the squares out of the pan when cooled).

To crush graham crackers place in a food processor or place in a sealed plastic bag and use rolling pin. Both ways work great. Combine the butter, crushed graham crackers, sugar and peanut butter together and press evenly into the pan.

Now melt the topping ingredients in microwave in 30 second intervals. Pour over base and spread evenly.

Refrigerate until set, I waited about 4 hours. Cut into squares. I kept these in my fridge as it’s already too warm here to leave out. Enjoy!

  11. I also do a similar recipe from the old Silver Palate cookbook. It never disappoints! I love wearing my Fitbit on those busy days. Quite surprising, isn't it?

  22. Cheri - I am a huge fan of peanut butter and chocolate combined. My mother said I was born with the Reese's peanut butter cup in my mouth! The sound wonderful, and great for a party. Hope you are enjoying this beautiful spring in Arizona!
