Grilled Tuna Niçoise Salad
Just a quick post today, will be out in the garden. The weather has been strange, our days alternating between the sun and the rain. Because of the heat my lettuce is starting to bolt earlier than usual. There is not much time until it will get tough and bitter. So we will be enjoying salads, lots of salads. Last night we had a tuna Nicoise salad. While my husband grilled the fish, I prepared the salad dressing. Life is simple and good here. We are very fortunate.

Grilled Tuna Niçoise Salad
Ingredients
  • 2 tablespoons Champagne vinegar
  • 1 tablespoon Fresh tarragon
  • 1 teaspoon Dijon mustard
  • minced Shallot, small
  • 1/2 teaspoon Sea salt
  • 1/4 teaspoon Black pepper
  • 1/4 cup Extra virgin olive oil
  • 3/4 pound Wild tuna
  • 1/2 head Lettuce
  • 2 medium boiled until tender slice Yukon potatoes
  • 1/2 pound trimmed steamed until tender Green beans
  • 1 sliced Tomato
  • 1/4 thinly sliced Red onion
  • 1/4 cup Nicoise olives
  • 1/4 cup Picholine olives
  • 1 tablespoon Capers
  • 1 halved Hard boiled egg
Instructions
In a small bowl, whisk together vinegar, tarragon, mustard, shallot, salt and pepper. Slowly whisk in oil to make a vinaigrette. Prepare grill for medium heat cooking. Salt and pepper and then drizzle a small amount of olive oil on both sides of fish. Place tuna on the grill and cook 5 to 7 minutes on each side, or until tuna reaches desired doneness. Transfer to a plate. When cool enough to handle, cut into slices.Add lettuce to large serving platter, then place tuna, potatoes, green beans, tomatoes, onion, olives, capers and egg on top and drizzle with vinaigrette.

  1. I hear you about so many of this! Our days are hot, mixed with raging thunderstorms and lightening strikes. I wish the rain would bring cooler temperatures but sadly it isn't. I had to pick all of our lettuce heads last week due to bolting, unfortunately I had to compost 2 heads that were just too bitter. I like you, am now in the total lettuce salad zone!

    1. Your garden is one of the prettiest I have seen Pamela, you guys are amazing. And every year is so different in the garden for us, some years it is foggy most of the summer, which is why our lettuce would last almost the whole season, but this summer is different......

  2. Those tomatoes have my mouth watering. Our cherry tomatoes are on but the big ones are still small and green. Enjoy the outdoors!

    1. I have been buying all of our big tomatoes from the farmers market as we can only grow the cherry tomatoes on the coast. We are having a beautiful summer, thanks Mindy!~

  6. The Nicoise is my favorite salad and I love using fresh tuna rather than the canned. I love everything you put in the salad it's beautiful and light and perfect for this horrible sweltering heat we are all experiencing,

  8. Simple and good works for me! Our lettuce bolted really quickly this year -- didn't get nearly as much as we usually do. :-( Love a good Nicoise Salad -- and with grilled tuna? Heaven!

    Love this gorgeous salad, Cheri, and I can only imagine how busy you are with the garden. No rain in sight here and the temps are soaring so the farmers are trying to cope with crops being ready much earlier and dry fields!

It must be, since everything is out of your garden (except the fish)! :) I bet that is very fresh, too, considering where you live right now. The dressing sounds wonderful with the fresh herbs in it.
