Two Quick and Healthy Stuffed Medjool Date Appetizers

Wow your guests on New Year’s with these stuffed dates. They are great for entertaining and never fail to be a hit. My first experience with dried dates was in a date shake. When traveling we pass through Palm Springs on our way to and from Oregon. Hadley’s Fruit Orchard store has been a fixture in the area for ages. Their date shakes are legendary and even to this day it is hands down my all-time favorite.

The health benefits of Medjool dates are impressive. Dates are full of vitamins and fiber and make a great sugar alternative. In the days leading up to the New Year we find ourselves consciously incorporating healthy foods into our daily diet. Which goes to show that even when celebrating you can make smart choices.

For today’s recipe, I stuffed Medjool dates two different ways. One with a combination of peanut butter and mascarpone cheese and the other is simply dates stuffed with gorgonzola cheese. Both ways were a hit, each with their own unique flavor.

Delightfully simple and easy; these stuffed dates make delicious healthy appetizers.

INGREDIENTS:

For the peanut butter mascarpone stuffed dates:
  • ½ pound Medjool dates
  • ¼ cup natural peanut butter
  • ¼ cup mascarpone cheese
  • 2 teaspoons peanuts, finely chopped
For the Medjool Dates with Gorgonzola Cheese:
  • ½ pound Medjool dates
  • ½ cup Gorgonzola cheese

INSTRUCTIONS:

For the peanut butter mascarpone stuffed dates:
  1. To remove the pit, simply slice the date lengthwise with a knife and remove.
  2. Combine peanut butter and mascarpone cheese, spoon into dates and sprinkle with nuts.
For the Medjool Dates with Gorgonzola Cheese
  1. To remove the pit, simply slice the date lengthwise with a knife and remove.
  2. Spoon a small spoonful of cheese into dates, enjoy!

  9. I love dates and we so enjoy seeing the date palms in Palm Springs also. Next time we visit I need to bring home some of those delicious dates. I've never tried stuffing them myself and now I have too great ideas. Happy New Year, Cheri!

  13. Date shakes!! I really love them - and I get them every time I go through Dateland on my way to Yuma! They make the perfect lunch, really! I will have to try the ones from Hadley's - in the name of scientific comparison, of course!

    Love your two takes on stuffed dates, Cheri - I have had them with Gorgonzola, but never with the peanut butter and mascarpone mixture - I have to try that!
