Whole Roasted Cauliflower
We are in the midst of all things Spring. Seasonal wildflowers dot the landscape, farmers markets bursting with colorful veggies; and the longer and brighter days are here. The news media is even predicting weather in the high eighties next week. With all these wonderful new changes I am feeling a little stuck. Normally I cook and hike my way through these various emotions and this time is no exception. The spark is still there.

Now can we talk about this meal. A real showstopper if you will. When this gorgeous orb is removed from the oven your guests will be definitely be impressed; I know I was. The flavors you season it with depend on you. Since I was roasting chicken with sumac and thyme, that is the flavor profile that I stayed true to.

A Whole cauliflower was trimmed and cored, and then rubbed with olive oil and sprinkled with herbs and spices. The cauliflower was placed in a large cast iron skillet and then covered and roasted in the oven for approx. 20 minutes. The aluminum foil was then removed and the skillet was placed back into the oven for another 45 minutes. My husband who slightly grimaces every time he hears the name cauliflower loved this dish. He thought it was “creamy and comforting”.

Mysavoryspoon was first started in 2010 as a way to journal recipes that I had collected from cookbooks, magazines, family and friends. Most everything was savory, using legumes and whole grains. Along the way I discovered a love for baking. Now a couple times a month you might see some type of sweet pie or treat.

  12. High 80's? Woah! That's getting warm for sure. So I love that you roasted this cauliflower whole. I've always chopped mine, but it's such a wonderful presentation to roast it whole. And your husband is right...roasted cauliflower is indeed creamy. Love this one, Cheri! :-)

  14. I love cauliflower and I look forward to trying your roasted version. It is different from the recipe I have used, so I am excited to see how they differ! Don't you love converting people (e.g. your husband, among others) to liking certain foods?

    I envy your seasonal changes there in Arizona. Your description makes me feel like I'm there for a few minutes and it is so appreciated! We are still in winter....snow mixed with mud. Argh.

    And I love your cauliflower recipe. I discovered whole roasted cauliflower a few months back and I love it. It hadn't occurred to me to season it, though, and I love your idea....which I will follow up on shortly. 'glad your husband liked it.

  20. Love roast cauliflower. Heck, any veggie tastes pretty darn good roasted, but I think cauliflower is special. Even people who don't like cauliflower -- like your husband! -- like it when roasted. This looks spectacular -- thanks.

  27. I've always been tempted to try a whole roasted cauliflower, but since we are only two, I have stayed away. I only ever prepare the cauliflower we can eat in one meal! Do you know how it reheats?

  28. i haven't tried this method but i really like the prospect of not having little shards of cauliflower all over my kitchen as i try to chop it up raw... :)
