Fresh Strawberry Pie

Fresh Strawberry Pie with Whipped Cream
Memories are a funny thing, growing up I might not have thought a particular moment would make a lasting impression. Sometimes it’s the little things that happen, the ones that seem so uneventful that later on bring you the most joy. The younger me was always racing ahead, not taking the time to savor an accomplishment or event. It was just me trying to get through the day. The older me wishes I would have stayed more in the moment instead of wishing my days away. But here I go wishing again………..

I have so many memories that revolve around food. One is when I tasted my first slice of strawberry pie. Even though it was years ago I can still picture that moment in my head. It was spring and I was at my grandmother’s house. We were sitting outside at a small table under a large tree talking and laughing. Her backyard was filled with beautiful flowers and shrubs, it was very picturesque. She brought out a gorgeous strawberry pie that was bursting with berries and topped with whipped cream. She cut us a slice and even let me have a second one. That was a great day.

For this recipe I made my own pie crust using this recipe from the NYT, follow the link here. I made the dough the day before and refrigerated it overnight. It was a quick and easy recipe.

Fresh Strawberry Pie

Strawberry pie is a spring-time classic. So fresh and sweet especially when topped with whipped cream.

INGREDIENTS:

  • 2 pounds fresh organic strawberries, rinsed and hulled
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 1/2 teaspoons Sure-Jell for low sugar recipes (pink box)
  • 1/8 teaspoon salt
  • 1 tablespoon fresh lemon juice

INSTRUCTIONS:

  1. Place 6 ounces of strawberries in a food processor and puree them for 20 to 30 seconds. This should yield around 3/4 cup.
  2. Combine sugar, cornstarch, Sure Jell, and salt in a medium saucepan, then stir in berry purée. Cook over medium-high heat, stirring constantly; bring to a boil. Keep stirring, boil for 2 more minutes. Transfer to a large bowl to allow it to cool more quickly and stir in lemon juice, allow mixture to come to room temperature.
  3. Cut the remaining strawberries into halves, and add to cooled purée mixture. Gently stir until berries are evenly coated. Pour into baked pie shell. Turn all berries on top face down for an elegant finish. Refrigerate until pie is chilled, about 2 hours.
  4. Serve, topped with whipped cream.

  1. I guess that's the best part of life, we keep making some memories all time without even realizing it. I always wanted to grow up so fast, but now I also think I could stayed in my childhood for a little longer time. This strawberry pie looks so beautiful and delicious. Lovely recipe, Cheri.

  2. I think almost all my memories involve food in some way, Cheri. And it's true...you never know what will stick with you so you can't really "make" moments. I think I tried when my son was younger but now, I just let it go and hope there are good moments/memories being made as we go along. I love that you have a great memory of strawberry pie. What a treat. I feel good just looking at this loveliness.

  3. I have been dreaming of making this pie as soon as the strawberries come into season. I can't wait because your pie looks fantastic! I love your memory of this pie with your grandmother. How incredibly special. I can just picture you both sitting under the tree enjoying a piece, or two, of this beautiful pie.

    1. Funny thing we were going to share this with our neighbors, one is a pilot and the other a stewardess, well they were traveling so we had to enjoy this all by ourselves, such a shame but perhaps a little too many calories. I see many more salads in our future.....

  8. Oh, I wish you had published this on the weekend! I bought 3 pints of strawberries at the farmers market (last week for us for a while...) and I made a strawberry tart. It was okay but I think your pie would be MUCH better. Can't wait till the next round of strawberries from Yuma so I can make this!

  11. I always try to make my pie dough the day ahead if I can. And then roll it out the next day. Always seem to get a better texture that way, and it's easier to roll. Anyway, food memories are some of the strongest, aren't they? And are the ones that seem to stick, at least with me. This looks wonderful -- and strawberry season is just starting, so your timing is perfect. Thanks!

  20. Hi Cheri--just tried this and, although delicious, it is very runny. The puree got jam-like (I could tell since I left the cooling bowl out), but it was like the strawberries released a lot of liquid as the pie sat in the refrigerator. The berries were quite ripe--don't know if they may have been juicier... Any suggestions?

Hi Inger, I'm not sure what happened I followed the recipe from the Cook's Illustrated. https://www.cooksillustrated.com/recipes/6499-fresh-strawberry-pie\ My berries were a day or two old and from the farmers market so they don't last a long time. I just read on-line that tapioca is a good thickner too, my pie was fine, sorry about yours.

    1. Perhaps I will try a mini-pie and test the tapioca (which is my usual berry thickener....). My kids gobbled up the soggy pie anyway--I went out and when I got back all that was left were some shreds of crust!
